The ingredients needed to cook Coriander Peanut Chutney:
  1. You need 1/4 Cup peanuts
  2. Take 2 bunch cilantro coriander leaves chopped / Β  Cups
  3. Use 2 Tomatoes chopped medium size
  4. Take 2 Green chili ' s sliced
  5. You need 2 Red Chili ' s
  6. Provide 2 cloves Garlic chopped
  7. Use 1 onion Small chopped
  8. Use 1 Tbs oil
  9. You need Seasoning
  10. Use 2 Tsps oil
  11. You need 1/2 Tsp mustard
  12. You need 1/2 Tsp jeera
  13. Prepare 2 Red chili ' s
Instructions to make Coriander Peanut Chutney:
  1. Heat pan with oil, peanuts & red chili's.
  2. Fry peanuts till they turn light brown.
  3. Transfer peanuts & red chili's to a bowl.
  4. To the same pan add onions, garlic & green chili's.
  5. Fry them on medium heat & to pan add tomatoes.
  6. Cook for 2mins or till tomatoes are just soft enough.
  7. Now add in cilantro to pan & cook for 2secs. Don't over cook cilantro
  8. Switch off heat & allow it to cool.
  9. Now grind peanuts & red chili's to a smooth paste.
  10. Next add the veggies & grind them smooth chutney.
  11. Heat a pan with oil & to that add mustard, jeera & red chili's.
  12. Once mustard starts jumping add seasoning to chutney.
  13. Serve chutney with Idli, dosa & vada or enjoy it as you like.
