  4. Use 1/2 tsp turmeric powder

  7. Prepare 1 tsp green chilli paste
  8. Use 1 pinch Hing/asafoetida
  9. Use 3 tbsp oil
  10. You need 1 tbsp finely chopped coriander

  12. Take For the outer batter
  13. Take 1 cup besan/gram flour
  14. You need To taste Salt
  15. Provide 1/2 tsp Turmeric powder
  16. Take 2 tbsp rice flour
  17. Prepare 1 tbsp hot oil
  18. Use As needed Oil for frying
  19. Get For the red chutney
  20. Provide 1 cup salted boondhi
  21. Use 10-14 garlic cloves
  22. Provide 1 tsp cumin seeds
  23. Provide 2 tbsp red chilli powder
  24. Take 1/2 tsp salt
Instructions to make Vada pav:
  1. In a pan heat oil, once the oil becomes hot, add mustard seeds, curry leaves, garlic paste, turmeric powder, hing and green chilli paste, sauté this for a minute, then add salt and boiled mashed potatoes. Mix well, add finely chopped coriander and set aside. Make small ball shape vadas once the mix is lukewarm.
  2. For the red chutney, in a mixture jar take garlic cloves, cumin seeds, salt and red chilli powder blend this into a semi coarse mix, now add the boondhi and crush it into a coarse chutney.This is your street style red chutney.
  3. Now to make besan batter in a bowl take besan, rice flour, turmeric powder, salt, add 1tbsp hot oil and water to make a semi thick batter, now dip the vadas in the batter and fry them in hot oil.
  4. Cut the pav, apply imli chutney & red chutney, place a vada in the centre, serve with more red chutney & green chilli.
