Steps to make Bhaji stuffed Buns eggless and without yeast:
- Sift whole wheat flour, refined flour, sooji, salt, baking soda & baking powder.
- Add sugar, ghee & mix well all the dry ingredients.
- Knead to a soft dough by slowely adding leftover whey (from homemade paneer) or milk.
- Cover & keep in a dark place for at least 1.5 hrs.
- Meanwhile prepare the bhaji. Heat a pan, add butter, saute ginger-garlic paste. Add onion saute till translucent, Add tomatoes, salt, pav bhaji masala powder, turmeric powder. Mix well & cook till it becomes mushy.
- Now add boiled & mashed potatoes, boiled mixed veggies. Mix everything with potato masher.
- Add little water (not much otherwise it'll be difficult to fill into the buns) & cook for 5-6 mins. Add coriander leaves, mix well.
- Bhaji is ready. Keep aside to cool down. Note: Later more water can be added to leftover bhaji (to be served along with buns) after stuffing done.
- Now, Divide the into 7 equal sized ball. Flatten each ball & fill with some bhaji masala, gently close the edges to form a bun shape. Sprinkle some black sesame seeds or kalonji on buns.
- Arrange in a greased baking tray with 1 inch gap & keep covered for at least 20 mins for second proofing. Preheat the oven at 190°C.
- Now brush the buns with some milk to avoid them drying out during baking & bake for 30 mins or till buns look golden brown.
- Now brush all the buns with butter & keep covered for 5-10 mins before serving.
- Serve hot with extra Bhaji, onion & a slice lemon.
