- Prepare 2 cups Basmati Rice
- Use 7-8 cashew nuts
- Take 6-7 pistachios
- Take 2 tbsp saffron milk
- Use 4 tbsp ghee
- Prepare 1 tsp cumin seeds
- Get 1 inch cinnamon stick
- Take 2 bay leaves
- Use 4-5 green cardamoms
- Take 1 star anise
- Get 2 brown cardamom
- Take 1/2 cup cauliflower
- Prepare 1/2 cup paneer
- Get 1/2 cup carrot
- Take 1/2 cup green peas
- You need 1/2 cup potatoes
- Prepare 7-8 Almonds
- Provide 10-12 raisins
- Take As per taste Salt
Steps to make Navratan Pulao:
- Take 2 cups Basmati rice washed and soaked in water for 1 hour then cook, drain and set aside.
- Mix the saffron with warm milk and set aside.
- Heat 3 tbsp ghee in a kadai,when ghee melts,add dry fruits and fry until they turn little brown and take them out in a plate.
- Then fry all vegetables one by one, take them out when they turn crunchy.
- Now add Paneer and fry until it gets little brown as well.
- In same kadai add cumin seeds,whole garam masala,bay leaf and stir fry
- Add cooked rice, salt and mix gently
- Then add vegetable, paneer, dry fruits and raisins.
- Mix all ingredients well.
- Pour saffron milk and 1 tsp ghee spreading uniformly,cover and simmer for 5 mins.
- Take out the Pulao in a plate.
- It can be served as it is.
