Instructions to make Inside-Out Vadapav:
  1. Heat 2 tsp oil in a kadai.
  2. Add rai, curry leaves, asafoetida, ginger garlic paste and green chillies. Saute for a min.
  3. Add mashed potatoes to it. Mix well and let it cook for 2-3 min. Take it off the flame and let it cool down.
  4. In a bowl add gram flour with 1/2 cup water. Add more water to reach a medium consistency for coating.
  5. Take two slices of bread. Create a sandwich with cheese, shezwan sauce and mint chutney. Cut it in four square parts.
  6. Make a patty out of potato mixture. Place the sandwich on the patty.
  7. Make a ball out of it by folding the patty from the sides to push the sandwich in the centre of the sphere.
  8. Add eno to the coating mixture. Do not add it before hand as it will result in frothing. Mix it once you are ready to fry.
  9. Now, coat the sphere in the coating mixture and shallow fry on medium flame until golden brown on all sides.
  10. Garnish and serve with fried green chillies and tomato sauce.
