  4. Use 1/2 cup dhuli moong dal

  9. Prepare 1 litre water
  10. Use 1 tbsp salt
  11. Take 1 tsp black salt

  13. You need 1 cup tamarind
  14. Get 1/4 cup jaggery (depends on tamarind's taste)
  15. Use 2 tsp dry ginger powder
  16. Prepare 1/2 tsp black pepper powder
  17. Get 1/2 tsp black salt
  18. Use 1 tsp cumin seeds
  19. Use 1 tsp funnel seed
  20. Use 1 tsp fenugreek seeds
  21. You need 1 tsp salt (according to your taste)
  22. Get 1 tsp garam masala powder
  23. Take as required Red chilli powder if desired
  24. Get as required Water as required
  25. Prepare For garnish-
  26. Take 1 tsp Roasted Cumin powder
  27. Prepare 1 tsp Roasted coriander powder

Steps to make Imli vada:
  1. Mix all dals and soak for 4-5 hours. Wash properly. In a mixer grinder add dals, grated ginger and grind it in a coarse paste. Add green chilies also if you want, I skip chilies.
  2. In a deep bowl take ground batter, stir it briskly for a couple of minutes (this will take 5-10 mins). Take a pinch of batter and put in water if batter floats, which means the batter is ready for making vada. Now add hing and cumin seeds and mix well.
  3. Take one-litre water and heat it. When it is about to boil turn off the gas and both salt, mix well. Keep aside.
  4. In a bowl take 1 cup warm water and tamarind. Cover it and rest for 30 minutes. After 30 minutes mess tamarind nicely and strain it well so we get a nice and smooth pulp.
  5. In a bowl take 1 cup warm water and jaggery. Rest it for a while. Then strain it and mix it with tamarind pulp. Mix well. Heat this mixture on simmer. Heat another pan and dry roast cumin seeds, fennel seeds and fenugreek seeds separately till aromatic. Let it cool and grind in a coarse paste. Put this mixture and all dry masala in hot chutney and bring a boil and simmer for 5 minutes. Tamarind chutney is ready.
  6. Take 1/2 cup tamarind chutney and 1 cup warm water mix it well and add some salt in it. This is for dipping vada
  7. Heat oil in a pan. Place a polythene sheet on rolling board. Take a lemon size ball of ground batter and put on polythene sheet, press balls slightly and make a vada. Wet your hands before make next vada, so it's easy to make. Transfer vada into oil and fry on high flame until golden brown. Repeat same process for all the vada.
  8. When colour turns golden brown drain the vada on a plate and put it on hot water salt mix for 10-15 minutes. Till then you can fry another batch of vada. After that you can replace first batch. You can see the difference that vada has increased in bit in size and their colour has changed.
  9. Now press each soaked vada between your palms to remove the water. Make sure you press them gently otherwise you might end up breaking them. Put squeezed vada in tamarind chutney mixture for 10 minutes.
  10. After 10 minutes carefully transfer vada on a clean plate. In case of over dipped you might end up breaking them. Repeat the same for all batches.
  11. Imli vada is ready to serve. Put 2 vadas in a bowl pour some tamarind chutney on it and sprinkle dry masalas over it. Serve and enjoy.
